Serves 2 very hungry people or 3 to 4 as a snack
Ingredients for Pancakes:
200g chunky or smooth low fat cottage cheese
100g GF rolled oats
4 eggs
1/2 tsp vanilla extract
Blueberry sauce
100g fresh or frozen blueberries
Pinch cinnamon
Juice of 1/2 an Orange
To serve; Almond or Macadamia but butter
Blend all the ingredients together in a blender or food processor.
Heat your flat heavy based pan and coat with a little coconut oil to prevent sticking.
Add a dessert spoon of batter making small silver dollar size pancakes… as they will be easier to flip. Keep the heat moderate as you want a nice brown finish either side and not burnt and uncooked.
In a separate small saucepan heat 100 frozen or fresh blueberries with a pinch of cinnamon and a squeeze of orange juice. Heat gently and length or time will depend on whether they frozen or fresh. You just want to warm them through.
Drizzle almond butter or Mac nut butter on your pancakes and serve with the blueberry sauce.
